Yeah, for gears I tend to stick to Shimano, wouldn't use 105 hydro though, worst looking shifters I think I've ever seen.

Just occurred to me, unless you live in a desert shoes on the outside of your seatpack is extremely non-functional. They'd be sodden in under a minute in the UK

There’s more than deserts and UKs out there; around here we often go a few weeks without precipitation in the warmer months.
edit - and who knows, those shoes may be crocs-like in their ability to shed water. -

but if you are serious an AusterityRad® can be achieved with a retro frame 650b conversion and dia compe brakes (direct mount) and rack. Those german 650b rims. SPA sub compact square taper cranks.

Looks Morocco-ish
I think most modern Campa parts look horrible, including that crankset. Those rotors are really nice though.
