Nice. remember seeing one on my travels that had the wood oven dome thing on a trailer so he could set up full wood fired oven for full piza orders and also had slices kept warm by oven in van for quick sale .

Yeah, I worked in Pizza express all through high school and Uni so ok in a (Pizza) kitchen (inc stock management and all that stuff)... have a plan in my head, it's just having the balls (and money) to go through with it... hmmm...

I had a fun time making pizzas the other weekend. Was accompanying the wife on a weekend away (a work thing for, child minding for me) and they had an outdoor clay oven.
I managed to perfect my pizza throwing skills, and encouraged others to have a go. Much hilarity ensued as they all fail miserably. A couple of rather decent pizzas appeared before the oven managed to lose all it heat making the other a disaster. Torrential rain plus clay oven (undercover, but alas) makes for bad pizzas. I guessing water everywhere is the perfect cooling system for a pizza oven.
I now definitely want my own clay oven, somehow.

I am all about the clay ovens since sumo and I had the best festival food ever at Latitude. Instead of processed, disgusting, overpriced shit I was actually happy to pay £6 for my pizza (+50p for toppings) and would have even paid more!
