Finally got my hands on a Ricoh GR, all be it the slightly older 10.1mp version.
Can someone advise how to keep the shutter speed high enough for street photography, whilst not maxing out the ISO?
These were shot at 1600 and are super noisy.

Shoot at wide apertures. It’s a 28mm eq APS-C camera, the DoF is deep enough to shoot street wide-open, particularly once you get a feel for a good shooting distance and set snap focus there.
If you have to bump up the ISO, shoot B&W. The noise is reminiscent of film grain in B&W - if you bump up the contrast a touch it very quickly feels like ‘are-bure-bokeh’. (If you don’t like that aesthetic then you’re a bit out of luck - I think Ricoh was angling for it because of the Daido Moriyama link).
