As others have said, entry level DSLR with a decent prime lens. Something like the Nikon D3200 and 35mm f1.8 lens would be a good combination.

Just picked up that teleconverter for the X100. It's very nice but does make the camera much bigger...

Ah I'll be interested to see how you get on with it. I've been tempted by one for ages but held off for exactly that reason.

I returned it in the end. The autofocus suffers as well from an already low point. Might as well just use the small DSLR with a fast 35mm and keep performance/IQ. The whole joy of the fuji is its (relatively) compact size.
Might perform better on an S or T though, so don't take my experience as the final word.

grateful for any suggestions - anyone got any recommendations for getting a large photo professionally printed - i.e. highest quality possible??
never done it before, would like to make just one really nice print. a quick google gives me the print space & whitehall.

Printspace is great. Used them a lot. They do c-type prints which work well if you're printing from an up-scaled photo.
