Ironically I'm making Rhurbarb crumble tonight..however MOC will be having Hunstman pie tomorrow.

How about a nice charlotte? Apple or whatever in the bottom of the dish, and a layer of sponge mix (eg 3 eggs, 8oz SR flour, 6oz each sugar and marge / butter) on top, bake... It goes very nice and moist underneath where it sits on the fruit.

Had a lovely Apple and Pear crumble at the Ladbroke Arms earlier.
However, pie is still my number one.

Partially destroyed now, was fucking lush
Recipe:
About 500g rhubarb sliced into 3cm pieces
50ml water
100g caster sugar
150g plain flour
50g oats
100g cold butter, cubed
125g demerara sugarStick the rhubarb in a deep ovenproof dish, sprinkle over the water and caster sugar
combine the flour, oats and butter rub it all together until its like breadcrumbs, mix in the demeraraSprinkle liberally over the rhubarb, don't pack it down hard. bake it at 180c for 35-40 mins until its bubbling at the sides.

That's how I do it - if the Rhubarb is still quite young, you can get away with just a quick stewing
