Yeah, I have an Icon (I think) summer jacket.
I got it free from someone who was leaving the country, would not want to have paid for it as it's only possible to use it once or twice in the summer. Being mesh almost entirely made of mesh it provides no warmth. I've worn it a couple times with a hoody under it in the morning then on it's own once the day warms up a bit.
Also, you ever tried to clean bug guts out of mesh?

Any opinions on a GSX650f? There’s one in the shop near me and it seems to tick boxes with upright position, fairing, shop support, nice beginner friendly cockpit. Downsides being weight and price.

Insurance - worth going fully comp on a cheap bike or just get the cheapest possible? There's about £100 difference in the premium (and a hefty excess). I think I'd rather spend the £100 on extras (legal/leathers/etc).

If you can afford not to go fully comp, then don't.
Why not the f4i? Always liked those, and they come up for decent monies. Somewhere between an RR and an f3
