probably was mozzeralla or just cheap grated cheese, not really important was damned tasty. Would be intrigued to taste the true poutine with curds!
now enough about cheese, we have plenty of good suggestions. what of the gravy? Bisto won't cut it. How do you get the required thickness? ideas?

I'm pretty sure they sell this or something like this at the ex-pat store just down the road from the Canadian pub. They also sell KD.

Poutine is tiny, young sardines, specifically from the region around Nice in France.....can be shallow fried, made into an omelette or eaten raw with olive oil and lemon.
What you are talking about is chips, gravy and cheap cheese...probably an English dish.
