Last year I made batches of pastry some with lard and some with suet. These seem to make quite flavoursome pastry with lovely texture. I made the mince meat, following the delia reciepe and deviated with ginger wine soaked dried fruits and cherry brandy rather than brandy also gentle on the peel and used cardamon as well as allspice and cinnamon. I also used pears as that is what I had to hand.

he's just a constant pest for our food - if you give him a bit he doesn't want it though - unless it's cheese, he loves cheese - maybe he thinks all we eat is cheese?!
Greggs - lovely pastry but to me the filling is a touch too sweet and could do with some more alchohol/spirit flavour - still probably the best on the high st though

One of the teams at work are having a mince pie taste test on Monday. They are all bringing in mince pies from supermarkets and have asked me to bring in a guest non-supermarket pie. I'm going to blow their tiny minds with some Greggs.
