I just ate a pile of adzuki beans, I spent days soaking and rinsing them.
Initially wanted to sprout them but didnt really work. So just boiled them and stuck them in a stir fry. They were well bland, disappointed.
Still got half a bag left, what shall I do with them dear vegans?
Hmmm, always willing to be proven wrong, I just read this:
"Adzuki beans, along with lentils and chickpeas, are a staple of the macrobiotic diet, which calls for the consumption of plenty of fibrous, protein-packed legumes. Macrobiotics considers adzukis to be the most "yang," or warming, of all beans, and consequently, good for imparting strength. **Known for their healing properties **in Traditional Chinese Medicine, adzukis are said to support kidney, bladder and reproductive function.
Like many other beans, **adzukis are a good source of magnesium, potassium, iron, zinc, copper, manganese and B vitamins. **Also of note is the adzuki's status as the **"weight loss bean," **since they are so low in calories and fat, yet high in nutrition. Additionally, they are relatively easy to digest, so they should not give you gas as other beans do."

I'd stick the Adzuki beans in a curry or a chilli... I find most beans are kinda bland on their own, a bit like plain tofu, you need to marinate it or stick it in a sauce to bring it to life... you could mash em up a bit and make em into burgers with some ginger, lemongrass, lime juice and coriander, that could work!

An unpalatable truth to face for those of us with a bag of quinoa in the larder. The appetite of countries such as ours for this grain has pushed up prices to such an extent that poorer people in Peru and Bolivia, for whom it was once a nourishing staple food, can no longer afford to eat it.
