  • Had a big clearout of a kitchen cabinet and found 3 bags of wheat gluten. Looking for some banging seitan recipes!

  • I tried the Hellman's vegan mayonnaise recently. Not a bad taste, but not really how I remember mayonnaise, but then I suppose none of the analogues are really quite like egg mayonnaise (which doesn't bother me). Two things I found interesting about it--it has taken a long time to appear in shops, and in the shop where I bought it, it is evidently outselling other brands, such as Plamil. Fat Gay Vegan is always warning about the big (not fully vegan) brands taking over market segments that smaller (fully vegan) manufacturers have been serving, and on this anecdotal evidence he seems to be right. (I'll still try just about anything vegan when it first comes out, though, except if it's made by businesses like McDonald's or Burger King.)

  • Mrs Ludd’s vegan simnel cake! (Well, the eggs don’t qualify, but that just means that the resident vegan hands them over to the non-vegans). Chia seeds working their magic again!

  • Yes. I like it, particularly the sriracha flavour.

  • It’s a standard fruit cake but with chia seed replacing the eggs (and of course veg fat instead of butter).

  • The Hellman's one is way better than any other vegan version I've tried (haven't tried, or even seen FYH), and they've also managed to get it into an awful lot of shops. It's been the only product actually labelled as vegan in a number of smaller corner shops I've been in, where you'd normally expect to find only accidentally vegan things.

    Hellman's will win this easily, by having a decent product (even if it's far from the best), a recognisable name and the reach of a multinational.

  • Made very big lentil ragu yesterday, nutrition yeast flakes, marmite and soy sauce really help with the richness. Oh and a shit load of red wine. Morrison’s have a decent and well labelled selection of vegan wine.

  • Yea, I'm a big fan of the Hellman's one has made the switch to vegan for me much easier!

  • I'm not a fan of the Hellman's stuff. It reminds me of "Miracle Whip". The Follow Your Heart stuff is an A+ from me.

    It's quite a bit of a faff compared to my usual chuck-everything-in-a-bowl-hope-for-the-best method, but worth it. This recipes gives a big haul, so i've have had success with KFC-style, in a sauce with pasta, and in a curry so far.

  • That looks great actually! My pal makes seitan for a living (check out VFC at Wharf Chambers if you're in Leeds on a Friday/Saturday night) and suggests using some sort of bean in the mix to make it more "succulent", not seen it in many other recipes online. Tofu in the mix is an interesting idea as well.

  • Here's my dinner from tonight. Spaghetti and homemade wild garlic pesto with salad, kale and tender stem broccoli. The greenest meal I've ever eaten. The pesto was banging, will make and freeze some more whilst there's shit loads of wild garlic everywhere.

  • It was! Would highly recommend getting out to pick some wild garlic as part of your daily exercise. It's absolutely everywhere at the minute.
