  • I've gotten into some bad eating habits lately, just eating the same few meals all the time out of laziness. Looking for suggestions for quick, easy things to make for lunch and dinner if anyone has any!

  • I’ve been lunch lazy this week, I think I’ve done wraps for the last three days if not four... good thing about them is that you can pretty much put anything in them... cold pasta, bit of salad, homous, burgers... it’s quick and easy

    A thin layer of tomato paste spread on a wholemeal tortilla (v.v. easy to make your own), 3-4 dollops of houmous and a few slices of smoked aubergine antipasti. A few mins in the oven for a quick 'pizza'.

  • My current lunch time staple is microwave cooked sweet potato (takes about 6mins, needs turning) with olive oil, salt n pepper, and fresh chilies and spring onion on top. Takes less than 10min and is quite versatile.. Keeps you going for a while as well.

    Not so quick but I’ve recently been making my own ‘instant ramen’. Fry garlic and ginger, add black beans and all the liquid (or any beans, I prefer unsalted ones). put a couple of scoops of rendang curry paste (tastes good, is often vegan and is easily available from a few supermarkets) or your own spices. If it needs more flavour / saltiness use soy sauce or miso paste / veggie stock. Finally just chuck the dry noodles in and let them cook in the bean sauce curry thing you’ve made. Also good to add mushrooms, or whatever veggies you have towards the end of the process as well.

  • Since I recently read about cooking sweet potatoes cut in half, lightly oiled and salted all over and cooked cut side down on a baking sheet for 40-45 mins at 180-200 I don't think I'd cook them any other way. all the juices caramelise on the cut end, they get super soft all the way through and the skins crisp up like proper jacket potatoes. lovely and well worth the effort.

  • Sainsburys has just had a big drop of vegan stuff in the ready meal section, loads of tofurky, violife and a goodfellas pizza in frozen.
    We mostly make our own stuff but got a couple of bits all the same.

  • I'm going to be off work for at least a week with a busted toe. Anyone got any favourite recipes? I can never normally be bothered making anything time consuming after cycling all day but up for putting a bit more effort in now that I've suddenly got more free time!

    Kim Kong Kimchi (can be ordered online) tastes awesome, vegan, and is made somewhere in the UK.

    Mod to the recipe above: didn't bother getting red pepper paste (gochuang) so just used tomato paste. Suggest using brown rice, I slightly undercook it. Tempeh works well in this. Sesame oil is essential though. One of those "even better the next day" dishes. oh god I want this so much now.....

  • I'm not a big fan of kimchi but last night I made something not far off your recipe so thanks for the inspiration!

    Does anyone have suggestions for places to check out around Stoke Newington or Finsbury Park/Holloway? I don't live in London and don't know either area particularly well.
