Marinated tofu, the one in the picture was tasty but a bit dry. I did another where I made a marinade with blended pineapple (leftover from the grilled bits), coriander, lime, soy, sriracha, miso paste, garlic, pepper and a few other bits and just kept coating the tofu while it was cooking. The skewers are pepper, mushroom (boiled first) onion and a chunk of pineapple, also covered in the coriander marinade.
On the plate photo is potato salad, seasoned cucumber, sauerkraut skewer, grilled pineapple and pepper. Would of liked to have a couple more bits, ie sweetcorn, courgette. And I didn’t have time to do any sweet potatoes!

Had tomato on toast today for lunch.
Whitish stuff is lemon juice blended with garlic and spring onion. I was quite conservative with the garlic (1 clove) but think I might experiment with adding more as it wasn’t overpowering at all, hoping that it’ll emulsify and get quite thick

This stuff is super tasty. I thought it might taste like pesto but it's got much more depth of flavour in terms of spices.

Had a quiet Saturday and went a bit wild on dinner. Miso aubergine was particularly good!

All this hot weather and the gift of an ice cream machine has got me making/experimenting with making ice cream. Tried with almond milk custard (with custard powder) and it worked, but tastes a bit empty. Any sweetness and vanilla was all ok, just more a sorbet than an ice cream for the mouthfeel. Any one experimented with making their own ice cream know if that’s just how it is, or do i need to add coconut oil or xantham gum or similar to get the “creamier” texture?
Technically it doesn’t m need to be vegan and just dairy free, but they are essentially the same thing given the key component of milk/mylk/m*lk etc!

Could you try some coconut cream? I've never made ice cream but that's what springs to mind!

Yeah, I did wonder that. Maybe the next batch will be a coconut ice cream to see if the texture is there. For the first one I just wanted vanilla and thought coconut cream would add too much flavour (although undoubtably delicious!)

Big recommend for The Archive near Copthorne. Stopped there mid-ride yesterday with Brixton. Good and plentiful bike parking, nice atmosphere, friendly staff, good coffee. But more to the point for this thread, great vegan food selection - mushroom or avo on toast for savouries, what sounded like some luxe porridge and a number of pastries and cakes. I had the cinnamon bun, which in its own was a reason to go back.
Don't let the fact it's surrounded by car showrooms put you off, or the couple of kms of dodgy road surface leading up to it!

Any recommendations for Bruges, Brussels, Hamburg, Copenhagen, Cologne or The Hague? Couldn't see anything recent in here, now preparing to trawl through Happy Cow.
Grasshopper Cafe in Hope had a nice kim-"cheese" toastie today. Some nice looking cakes and not-sausage rolls in Castleton Coffee Co too.

Oo there's a noodle place in Brussels called Liu Lin. There's a vegan waffle place in the centre called Veganwaf, it's in a dodgy looking shopping centre but persevere. Lucifer Lives is good but always busy. Other places: Tich, Le Botaniste, Yummy Bowl and Green House. There's a ramen place on Rue de Flandre with good options, can't remember the name.

In Hamburg I went to a great Korean place in Sternschanze called Kini (iirc), nearby was vegan cafe that had wurst and stuff too. Seemed like it wasn’t that hard to find good stuff to eat tho!

Thanks ^ have had a few recommendations for Hamburg, Jim's Burritos being the most frequent.
Quick recap of Bruges:
Beer = excellent.
Food = ok.Missed Blackbird cafe which was fully booked for brunch over the weekend. Veno Cafe round the corner had good pancakes and tofu "egg salad" bagel along with several good looking cakes.
Despite limited options, Potato Bar was well reviewed but both burgers were underwhelming and only sweet potato fries are cooked in veg oil. Similarly Greens&Beans didn't live up to reviews. Service was slow, no tap water, free copies of The Great Controversy. Sad.
The one vegan fritteur has closed, so we ended up at Fritbar on one of the main tourist streets. One of the few places frying in veg oil. Had vegan mayo. Checks a box.
Chocolate Bar Brugge/Belgian waffles&ChocoKebab came through with vegan waffles 👍.
There were a handful of fancy places we skipped. Spent the money on tripels instead.

If anyone’s in Dorset over the summer, the Thimble Inn in Piddlehinton near Dorchester has a lovely selection of things on their vegan menu. Also Feed The Soul in Godmanstone is well worth a visit for great coffee, homemade kombucha and cakes.

Late to the party here but oat milk works well for a bit of body and depth.
Xantham is a tricky beast and makes your ice cream 'chewy' if you use too much. Depends what texture experience you're keen to embrace!
Have a look at these from Holland and Barrett when your prescription runs out. Super high levels of B12 and other B vitamins. I used to take them when I was working 2 jobs and generally not looking after myself. Kept me going nicely!
