Thanks. The shoes are all kinds of weird at the moment tbh. I think the left heel comes into the pedal too much, they don't feel locked in (probably so I can unclip quickly if I need...), and then I know I've popped the boas up when just pedalling hard. (well, as hard as I can)

Depends on what exactly you mean by that. The early and/or low end ones would be 126mm, the later and/or better ones would be 130mm. I wouldn't worry too much about which you end up with, very few people ever died from shoving a 130mm wheel into a 126mm frame, should you be minded to go in a neo-retro direction.

It's for a specialized Sequioa if that makes any difference? it is a beast of a winter bike, but is a winter bike really a winter bike if it has no mudguards?

The kit will include new ratchets which may help alleviate the issue. The only issues I have had with tensioner popping up have been when I have knocked it against something. Maybe for CX a bit of gaffer tape would hold it down better? I can help if you do go down the ratchet changeover.
