Our first overseas family holiday was to Majorca. I'd definitely recommend a trip to the old town in Palma. The Alfabia Gardens just by the southern entrance to the Soller tunnel are worth a visit, as is the monastery at Lluc.

I am also thinking of going out end of March or end of April.
Just met up with a pro-cycling buddy who is about to head out there for 3 months. Apparently, at the right hotel, they are full of cyclists out there for winter training. He is going out with a small team and is planning to meet other cyclists in the hotel and out on the road to ride with over the course of the 3 months.
Sounds pretty ideal if you are going solo!
Let me know if you would like any Garmin routes or more suggestions for places to go.
Apparently there is also a bar/restaurant run by an ex-pro that is full of cyclists every evening having a beer and some (so I've heard) good food.
For any foodies, Ottolenghi did an episode in Majorca late last year. Possibly worth checking out his site/twitter/youtube to get some tips.

Spanks. Shit, I just had a thought - my Garmin might only have UK maps.
Maybe time to investigate those open source maps?
If you have the standard Navigator maps then I think they cover Majorca
