Shop stuff is better. Proper outlets have a machine which sort of "air fries" it, I think some people call it "broasting". Gets a lot crispier and less soggy with grease.
Sticking it in a pan isnt as good.

Pressure frying is the best way to fry chicken. He is right. Maintains more moisture than normal frying. Find a shop that cooks decent chicken this way and you're on to a winner.

I've had great fried chicken made all the ways you can make it. The best were, in no particular order: Made by my pal in a flat in Clapton, deep fried, to his late father's recipe, who was the chef at The Four Aces club (I'm told their chicken was legendary); made by a a guy from Texas in his flat in Paris; in a diner in Mass., in a restarant in N.O. called Luizza's. Of the latter two, the Agawam in Mass. made it the way you describe. It was nice. The best was the Louisiana one.
