Now maybe anti porn, a plastic handled kiwi 511 knife. Then a pair of couzon knives that were allegedly expensive, but not worth more than the €2 for the Japanese knife and a €4 for the kitchen knife

GF's Okatsuna garden scissors are looking a little worse for wear. What would be the recommended fix? Bit of work with a stone and then some mineral oil?

I bought something called a knife eraser block, based on a recommendation on here. It worked well at getting rid of surface rust and blemishes on an old kitchen knife. The knife wasn't quite as rusty as that but might be worth a punt, it wasn't expensive.

Clean with vinegar and wire wool (or silver foil if you don't have wire wool). Then dry and rub over with a light oil - veg oil if you don't have anything else.
Hard to tell but just in case that's lots of sap and sticky residue on the tips give that a clean with alcohol first as it'll be quicker than vinegar.
Surprising that garden scissors have rusted like that, but it all looks like surface stuff so I'd keep it light.

One of the tricks to clean rusty tools and saws were to smear them in the very cheapest ketchup. The cheapest ketchup has a very high vinegar content.
If anything does survive that, then electrolysis using a 12v battery charger.

Oxalic acid will get rid of the rust in minutes but you’ll be left with pitting, which will still need to be polished out. There’s a commercial product called Barkeeper’s Friend that’s mainly Oxalic acid with, I think, a mild abrasive. Hardly worth it for these small bits of rust but might be useful for a rusted cast iron pan from the car boot. I’ve also used HG limescale remover for getting rust off but that is mainly phosphoric acid and stinks.

What are the pros and cons of a one-sided edge? (Perhaps also known as a chisel edge?) I bought a NOS Kalashnikov bayonet, and it has a chisel edge which has never been sharpened. Apparently they were supplied unsharpened, which I suppose is cheaper and gives soldiers an excuse to learn how to sharpen. Anyway, should I put a one-sided edge on it, or a double-sided edge?

Sushi knives are single sided because it makes it easier to do thinner slices. Downside is the edge will pull away from you while cutting so easier to edge up with wedges rather than slices.
I have an accusharp that I used for all my knives, it works wonders on bread knives. You are welcome to try it out.
