There’s a tabac/knife shop in St Quentin en Yveline shopping centre that had loads of pocket knives/Opinels, maybe worth a look if you’re not too far?

Do you mean the one that is near the shopping center with carrefor. Well the outdoor part, near the post office, if you get what I mean. That tabac does have some great knives.
There is a go sport further down, well there was..the blue or the orange?

Love the look of that Spyderco bug, might have to invest in one of those to replace my current SOG key ring knife as it has become apparent that it may not be legal. Strange as I have had it through airport security in UK and US many times without a second glance

I bought another IKEA kitchen knife last week, it's a fucking awesome thing... Great balance, great cutting edge... Only AU$20, fantastic value... It's replaced my no-name TK Maxx thing that I've been using for the last however many years...
The new kitchen shears are also doing the business on the daily, other half keeps nicking them to chop etc...

Yup, that’s the one I was talking about!
Haven’t been back in a while so don’t know what they have at the moment.Never understood the sale of butterfly knives...

Supposed to handy for sailing when you can open the knife one handed.
Almost bought an old Gimel flick knife, then thought about how legal it is in France never mind the UK.

Not a short trip to buy direct then by looks of it. Hope you can find one locally!

Does anyone have a suggestion for where I can get a carbon steel, sabatier cook's knife? 20cm blade.

Had a go at the handle:
It has some flaws and is a bit too thick, but hey ho. It will hopefully add a bit of joy and value to a cheap shit knife.
Process photos here for those who like that sort of thing.: https://www.lfgss.com/conversations/178272/?offset=850#comment14874811

Really nice. Did you use a mix up glue I always worry ill make a massive mess and end up with glue all over the place
-

Thanks, yes, two part epoxy. I’m getting way better at estimating how much I need to mix. And I use white spirit and tissue paper to wipe off exess before I leave it to cure.
