Playing polo drunk is definitely a bigger issue than high sticking.
And as for alcohol. Well that's quite a big issue really...
On a personal level I've made the decision not to drink at tournaments, until I'm done for the day (I still need to work on drinking the night before games though....) That's just for performance reasons, rather than anything else. I don't care if others do, as long as they aren't dangerous, which would hopefully get called anyway.

I'm switching my hockey gloves to some carbon knuckle dealies tonight, see if it makes a difference to mallet handling. Makes me anxious to be going against trend though.
I wouldn't worry, plenty of people (including me) use the carbon knuckle ones. I really like them. I've tried bigger ones like hockey and cricket ones, and find them really restrictive.
Which ones are you getting?
I have the RockGardn FATE gloves:

I have the RockGardn FATE gloves:
I got the fake Oakley ones from eBay, for £10 I figured they were worth a try. Wore them last night, and they were good. They're pretty close-fitting, so much easier to turn mallet over on the fly than what I'm used to. Despite the thick neoprene there; the tops of fingers and thumb feel slightly vulnerable compared to hockey gloves. The RockGardns look like they're better than the Fakleys in that respect, but rest of hand is well protected.

Yeah, that's the one area you don't have much protection with that type of glove, mine are the same, but I've never really injured myself there, I find it's mainly the knuckles that get hit.
