Hamilton Khaki Field Auto 38mm would be a decent choice, and significantly under the £1k (you can pick them up around £375). They are pretty versatile - can be dressed up or down, most straps work. The 38mm size wears quite large so works on variety of wrist sizes, so perhaps lower risk if a present and the husband doesn't get to try it on first.

Quite a few Longines come in around that price point, many with display backs. Eg:
https://www.longines.com/en-gb/watch-presence-l4-921-4-72-2
Depending on the style you want they do sportier models as well.
Not sure I 100% wholeheartedly recommend Longines as I have two friends who’ve had problems with theirs (one had the bracelet break on his Conquest, another had the lume fall off the dial on his heritage model, I forget the name) but both were dealt with under warranty.
A Junghans Max Bill automatic would also be a very tasteful choice in that price bracket.
Also you can just about get into Nomos for a grand, which is some pretty nice watchmaking for the money (though this model is manual, and no display back):

Farer worth considering as well on the more casual/colourful side of things.

Great options there. The Junghans is great - the black /grey dial one is lovely too.

Thanks for all the suggestions.. I’ll pass them on
Farer looks good.. the junghans may be a little delicate for him.. he’s an outdoorsy type.

Well on the tougher side of things there's always Seiko to consider. Eg an Alpinist:
Or the recent Prospex land models:
Both well within budget, leather strap, display back, several colour options for each.

One of the Helson pilot watches. They look like really good value ($499 and they've got 15% off at the moment), I was pondering one myself.
Also comes with white dial and a few other styles (although a couple are out of stock).

No, this one's an automatic - I don't think they were doing the jump hands when I bought this.
