Go and try on a Grand Seiko SBGE205 or SBGE211, whatever you think of GS. It is a great watch in a good size (it wears smaller than the spec sounds).
SBGJ219 If you want something smaller and a bit less sporty or you prefer high beat / automatic to spring drive. There is another similar non high beat light dial one.
Buy grey market (eg Watches of Mayfair) or tax free and it will hold its value. If they did plummet I would suggest you buy a second hand one, but they don’t.
If you actually want it to appreciate it pretty much has to be a Rolex.

OK, so a true GMT automatic that has a chance of appreciating in value and isn't a Rolex / Tudor. Well that should be easy :)
Sadly, as others up-thread have said, the "appreciating in value" bit is impossible to predict and unlikely unless you're super lucky or into silly money Pateks etc (and are somehow able to get them at RRP). Buying secondhand would keep losses lower, but obviously comes with a bit more risk.
What's the budget?
And out of interest, what's the prob with Rolex or Tudor? -

I'm just annoyed with Rolex for their market control strategy (as effective as it clearly is in stoking demand), and if I bought a Tudor it'd remind me that I wanted, but could not buy, a Rolex every time I looked at it.

Re appreciating in value. Long term I'm sure a Rolex GMT is a good bet. But right now it's peak GMT fever, after a great stock market run, a good 10yrs after the last recession, not long before Brexit is going to be implemented, with a nutter in the White House.
For those reasons I'd be hesitant to pay a premium for something that I wanted to see a return on.
I would say Grand Seiko but, logo issues aside, this is a bargain for under £1k.
