of course. Medium cage just allows you to use larger cassettes, max with short cage is 27t.

Sorry but this is not strictly true.
The cage length determines how much chain you can take up, and is thus more effected buy chainring teeth range.
On a MTB you use short cage for a 1x set-up, med cage for 2x, and a long cage for a triple. On a road bike the tighter cassette means you can use a short cage on a 2x.

With a short cage mech you should avoid shifting into the smaller sprockets when you're in the inner chainring but otherwise they're perfectly happy with 53/39 and e.g. 11-27.

Try sora and see how clunky the shifting is.
There is a price differential for a reason, and clearly people are willing to pay for it.
However there is an issue of diminishing returns.

The current Sora is replaced by the Tourney which apparently Shimano new low end group set.
Sora are horribly spongy both shifting and braking, would be interesting to see if the newer design an improvement or merely a different kind of bad.

If you are not going to go Dura-Ace, (Super) Record or Red, is there any reason to not choose entry level groups? Is there a real need for so many in-between gruppos?
A lot of it is to do with hitting price points for complete OTP road bikes. So it looks odd to the component buyer.
Groups in the 105 etc. level are solid performers, with small comprimises for price. 99% of people would be more than satisfied with these.
Above this you get lightweight, and refinied shifting at a heavy premium.
Below this stuff gets kinda annoying.IMHO.
