CRC have Blackspire chainrings in 64mm bcd, but only up to 26t. £10 or £15, depending on colour.
Blackspire steel 'rings only go to 26t, but SKU 595-4248 is a SuperPro 7075-T6 Alu ring in 28t, 64mm bcd.

I never got the long stem thing. Longs stems make things handle like shit, unless you're planning on going in a straight line.

The long stem thing in polo, in my experience, is for gaining reach over the front wheel whilst retaining a short wheelbase. It's not so much about the handling that it provides, but the longer stem seems to help in contact as bar nudges have less impact on your direction. It means you have to be more deliberate in your steering but it saves you falling every time someone clips you. Does that make sense?

Charge Plug with long stem and 57cm toptube > Steamroller with short stem and 61cm toptube

That kind of makes sense, but I would rather bend my arm and gain reach than lose stability by having a stem that survived from 1991.

Look at the number of top players who used to play on janky shit bikes, the gain if anything IMO is marginal. Fuck trends, just bloody play FFS!
Case in point: 26" > 700c. Theoretically maybe, but based on the past year's results in both the World's and Euros and quite a few better players now back on 700c - Rupert, Josh, Luca, Emmet, Hayden (albeit he was on 650c previously), IMO the player makes more difference than what they are playing on.

Get a bike, tweak it to suit you game and play lots on it, tweak it again, play lots again, tweak it, then choose the best setup which suits your game. Same goes with mallet length, try different lengths, choose the one which suits you best.
We are different players, different style of play, different height etc. Here's two examples: Seb's playing with 110mm mallet, he's playing well, does it mean if you do the same you'll also be brilliant? Rupert is playing on a Dolan with stock cyclo-cross forks and doing well, again, doesn't mean that anyone else would too.
