Coils warm up pretty quick, hence when they start to break down the more heat cycles the worse it gets.

But they're pence, so I'd change the coil before looking for vac leaks and fuelling faults. Worst case you've bought a spare coil for the future.

Just seem to remember similar issues, ie loss of power when opening throttle / missfiring etc. Might not be but as others have said worth a check.

Put winter tyres onto some nice light wheels and added 30mm either side. Possibly 10mm too much with stock arches. Fun to drive though

Occam's razor would suggest one problem rather than multiple- so what we are looking for is something that has made the car lose 100bhp/boost slowly and only to 0.7bar rather than boost fast to 1.4bar.
It also chokes when larger throttle openings are applied after some time (1 hour plus) running.

Split or collapsed hose as BRM said sounds plausible. When cold and stiff it's okay, warm and floppy it's a problem.

Air filter is brand new and we disassembled the entire intake system, checked for leaks, cleaned and reassembled it.
I agree- it feels like a hose sucking shut, but I don't think it can be, which is why my thinking is rather than being an intake issue it is an exhaust issue.
That said, if Mr Skuzzle pulls a tennis ball out of the throttle body tomorrow morning then happy days.

Sounds even more like lack of air. If the air filter is new and the intake has been checked, it sounds possible that there's an exhaust obstruction.
On a side note, I feel the Volvo could benefit from an external wastegate and screamer setup. You know, for the LELZ.

If the cat is blocked then a rapid de-cat/test-pipe install will occur.
Mr Skuzzle doesn't think that is likely though as a massive amount of oil would have had to be going through it to block it.
But that said if the turbine is dying, would it dump enough oil into the exhaust to kill the cat?
Would cat "get better" from sitting and cooling down?
Just checked, 100 cell cat and two straight through silencers- none of that sounds likely to block. Goddamnit.

Would lack of air cause the car getting hot? Unless there is a serious fault in the cooling or lubricating system.

Once a hose collapses under vacuum/pressure the next time it collapses the tube require less pressure than the first as the pipe degrades. You can get failure or reinforcement that cause partial internal collapse but those are usually easy to tell be feel or view.
