Is it cos I is black? Yep, going all-out stealth on this one. It started with a black frame but got a bit carried away and just want to finish it properly now.
Painted/coated nuts will surely chip but don't you get blends of alloy that are black?

Stop looking at bike shops. Go look and fitting and bolts shops, the the thread deatils, M10 at a guess and go search.

You can get black alloy Halo nuts in shop14. They shouldn't chip / round etc if you use a socket wrench.

this guy is right. you should be able to find come that are gun metal grey alloy. be sure to get washers too.

Search for a "phosphate coating" if you want steel nuts in black. As it is a coating it will still wear off in time but they are more durable than alloy nuts.

heat up dip in old motor oil, if they re made from steel

why?? everytime you use a spanner on them, it will chip etc.
