Saarf! Epic projects you have there. I would not have the balls to build those up and ride them, all nos stuff in boxes - wow.
Actually I would build one up and keep another bikes worth of bits hanging on a wall somewhere looking pretty.
I wouldn't worry about the braking surfaces, should last ages if you only do the bits of dry pootling I imagine you would do on such a bike. Use brake pads that are not too abrasive and make sure you do not get any grit embedded in the pads either.

I haz a few sets of the campagnolo ones that go with the gruppo
strange why they stopped production
i know suntour superbe pro stopped as they couldn't deal with brifters
I think shimano mtb kit was market leader
the hubs in the 2nd gruppo are used
i have these generic bear types
so i figure if i ride with them and put some alien skins chain stay size pads on crank arms, should

New bars, drilled Weinmann brakes and cotton tape, here's my '56 Holdsworth Monsoon.
Just realised how much faster this is with drop bars back on, I'd previously fitted a back swept bar for a gentlemanly pootle about on, wang some drops on and suddenly the gear ratio is way too low. It's single speed too, due to wanky knees.

Hard anodised (CD, couche dure) is quite hard wearing in clean dry conditions, much more so than soft anodised rims.

Donewich. Just need to decide on a suitable ratio (50x18 at the moment).
Mudguards will be added if rain's expected.
Edit: Also... radially laced front a bad idea for bumpy country roads? Might pop a different one on.

About 13 stone. I've only ever had those wheels on track before, don't want to hit a pot hole in Epping and ruin my ride!

MKS Urban pedals? got the same one on my audax bike, really comfortable and so easy to flip to get in.
Cost me £50 brand new! rather it was the stem....

Was it a brand new handlebar? what clamp diameter is that handlebar?
