The old chainset/bb was rusted in place, rims were shot and it basically had all of the hallmarks of a 30 year old bike. Wanted to keep it clean and cheap but I definitely need a new saddle to replace this beast.

Honjos for sure. I just spend 3 hours installing some Gilles Berthoud mudguards on my GFs bike. they look nice. hammered honjos are the nicest though.
almost! front rack and fenders are still a challenge. but it is getting there
test ride just finished, it's lighter, faster and smoother than I had expected

yes indeed, got the Honjos already, but putting the front one on without a proper rack would be a waste of time/temporary solution. so I'll have to wait/search a bit longer (either Nitto or Toei)
The Toei is all kind of awesome, you're incredibly lucky to own such bicycle.
thanks Ed. I agree I am lucky. it really is a piece of work this resprayed and adapted (from 650B to 700c) frameset from the early 1970s, and adding my ideas and personal touch to it is very satisfying. I'll sum up the parts I used so far:
Wheels - Rigida Sputnik 36 to Dura Ace 7400 hubs, 7 speed cassette 14-28
Tyres - Grand Bois Cypres 30mm
Chainset - Dura Ace 1st generation with 48 and 39t
Rear deraileur - Dura Ace 1st generation
Front derailleur - Dura Ace 7100
Brakes - levers Dura Ace 1st generation, cantis Shimano 600
Stem - Nitto Pearl 140mm
Bars - Nitto Grand Randonneur
Saddle - Brooks B17
Seatpost - SR Laprade

That's a pretty good specification, didn't realise it was adapted for 700c, personally I'd have gone for the 650b.
The honjo mudguard were surprisingly easy to install wasn't it? a lots easier than the SKS much to my surprise.

I want a 650B bike just so I can use the Hetre tyre. I love that red/tan combo.
