Use latex tubes rather than Supersonic, you'll be faster for it. 100g in the saddle if you switch to full carbon. Loads of weight in the cages.

I'm not trying to go full-on weight weenie so will use what I have where it's good enough. I think I've settled on a plan that would only cost about £1k net and would get the bike to a very respectable 7.2kg. would be contingent on finding RED for £1k though
in the meantime, I'm moving house so this plan might have to sit on the shelf for the next 4-6 weeks

Have you allowed for tubeless sealant in your 550g for tyres? That'll add 50-75g if you haven't.
Easy 50g to be saved with a UNO stem... knockoffs can be had for cheap too.
Getting 2/cages down to 20 odd grams is easy as said above with the XXX light knockoffs.
130g Hylix seatpost (use at your own risk).
Plenty of non-boutique saddles at around 100g - stripped carbon SLR for example will be 110 or 115g (they fit me, but YMMV).Could easily knock a big chunk more off on wheels, but $$$

A Ritchey C220 stem will save you 20 ish grams, likewise Ritchey bars and seatpost could a bit more.

unpopular opinion probably but:
to be honest in my view it is not worth spending £1471 to make your bike a little lighter.I would encourage you to spend that money on 4 separate weeks of amazing cycling adventures

If the claimed weights are accurate, and as long as you don't use things like air in the tyres (~20g), cables (~120g), handlebar tape (~40g), computer mount (~40g). QR skewers are never included in even claimed wheel weights, so there's another 50-100g even for light ones. If I only included things in your list, my 6.85kg bike would only be 6.48kg :)

Stuck some bits on my dad's frame - mainly parts bin stuff and some things from here.
Couple of issues to iron out...
- BB is too wide as this had a triple on before, which is affecting chainline and shifting.
- Front wheel is slightly off centre and I'm note sure why (it isn't the dishing). Am guessing bent forks or something up with the dropouts? Suspect my dad has fallen off it at some point so will probably try this Jobst Brandt method.
