Excellent.
Im going to smithfield tonight to pick up the two fresh goose livers that I will be soaking in Sauternes for the next couple of days then turning into proper fois gras for christmas.
I am excite
I'm skipping the making of foie and just treating myself to a bottle of Sauternes on Friday for the festive pickling period. Picked up a tub of duck rillettes today too. Still need olives.
I would like a tried and tested recipe for carrot cake please. I know the internet is awash with them but if somebody has one of their own which is delicious I'd like to nab it if possible - particularly interested in achieving the most yummy frosting imaginable.

Goose livers have been soaking in sauterne for almost 24 hours after having to remove all membranes etc. In the morning I shall be adding appropriate seasonings/spices then get ready to cook the mofo.
After that i need to get cracking with the 100 macarons that i have committed to make. Chocolat, pistache et framboise.
I am still undecided if i am going to fill the raspberry ones with either a raspberry cream or a thick coulis jam type thing. any thoughts?

Might have to be but the coulis would be so much easier to make and ive go so many other food things to do tomorrow!
Also got to make the pastry for the christmas day lemon tart. im gonna get it in the new lovely fluted copper tart tin i brought today from divertimenti and then freeze it ready to blind bake on christmas day.

This week I had to eat the most bizarre vegetarian Christmas lunch at the hospital - a 'burrito' filled with spinach, walnuts, Stilton, mushrooms and broccoli, served with cranberry sauce and brussel sprouts. Dare I say it, it was actually quite nice!
