Quick and late supper:
Bed of baby spinach, crumbled some VERY good feta, some VERY good smoked mackerel (hickory with salt and demerara) half an avocado and on top a poached duck egg. Served with a slice of seedy toast.
Awesome.
AND I didn't mess up the poached egg. Small wok. Hot water. Whisk it (using a whisk, not a spoon) into a vortex of sorts, drop of vinegar into a ramekin, followed by the egg, slowly lower it into the moving water, leave for about sixty seconds, drain, dry, serve, eat.
I didn't even make it out of the kitchen, I just ate standing up by the sink.

Going to make a pork, pumpkin and cassava mash bake at the weekend. Never cooked pumpkin before, please give me your best savoury pumpkin seasoning tips. I'm thinking chilli and corriander but how would you do it?
