  • the quorn was a little disappointing but I did what I could to bring it to life

    So many times I've talked up quorn for meat eaters, claiming it's just as good as meat. Oh how wrong I was.

    That said, if you take it for what it is, and like you work in some flavours in it, it's actually quite good

  • my top tips for victory in this much discussed discipline are: infusing the milk for the white sauce with an onion, a crushed garlic clove, a carrot, bay leaves, parsley and whole peppercorns for a good half hour before draining and making the sauce. i also added the skins from the salmon, cod and smoked haddock for added fishy bite.

    my other top tip is adding a teaspoon of english mustard to the finished white sauce before adding the fish and prawns and pouring into the baking dish. adds just a little background warmth to the whole thing and makes the sauce a lovely

    On the money! Gives the best fish sauce, I some times add aniseed flavours (i don't use salmon) so fennel or star anise go in for a little bite.

    As well as mustard I splash in some paprika but Sof loves the heat

    it definitely has it's place, it's fairly cheap, it can be kept in the freezer so is easily on hand without the tedium of fully defrosting it as you would have to with real mince. I'd never say it was an ideal 'swap one for the other' substitute but as an alternative ingredient (much in the way you might replace chicken for prawns in a thai curry) it can be used to make perfectly good dishes that have their own merits/flavours.

  • Completely agree. It's ace for bolognese if you do a properly good tomato sauce base. Same goes for lasagna

    also 'chicken style pieces' can work well in stewy / curry-y things

    Taking my mate there after he took me to the guy who won masterchefs pop up restaurant the other week, which was equally ale themed.
