It’s being doled out to various families as we visit people over Christmas.

Other half overestimated the beef rib, 5.5kg for 4....
Cooked the serious eats way - 6hrs at 70c and then 10mins at 260 once it had got to 53c internal temp. Absolutely perfect, just rather a lot of it....

Bought a tiny 2 fist sized bit of aged sirloin at a ludicrous price as just the 2 of us and not around to make use of it for days afterwards.
Meat has only just gone in and will be done in an hour, none of this getting up at 5am
