hmmm I'd have said soy and maybe some hoisin/bbq sauce (or ketchup) could thicken with some corn starch - not fish sauce that flavour is will be far too strong. What are you cooking?

Delicious. I’d rate Dominique Ansel slightly better but Rinkoff is only 15 mins from home by bike and their cronuts are half the price, so it’s a no brainier. Thanks for the tip!

Trying to find an ice cream/batter scoop for dosing cookie dough. There are loads on an online webshop but with very mixed reviews. Ideally one with a trigger mechanism for ejecting balls of cookie dough. Possibly a couple of sizes for small and large cookies.
Any suggestions?

I was making peanut cookies at the weekend, the mixture was too sticky to make quenelles. Hence the interest in an ice cream/dough scoop as suggested in the recipe.

Had to look up quenelles though I’d heard of them before. Mom’s technique was less refined, but I always marvelled at the consistent size of the resulting cookies.

Get a cheap metal faced one. They all fail in the end.
I don't think HCBs are superior to mince pies, but growing up in a non-white, non-Christian family, we used to eat HCBs all year round. They're always available, so why wouldn't you? I remember casually mentioning it to my gf (now wife) quite early on in our relationship and she had genuinely never countenanced the idea. To her it was like eating Easter eggs at any other time of the year.

Unrelated, I'm definitely buying a box of mince pies from Dunns tomorrow.
