I only ever bin veg that has been used for making stock.
I guess you could just use it as a base for a larder stew, bulking it with pasta / pulses / grains

There are some Indian shops at the bottom of Loampit Hill (Katpakam Cash & Carry) that might have some. Can't guarantee they do, though, as I haven't been there for a long time.

Made my best ever pho yesterday - id roasted off all the bones and trimmings from the steak and made a stock with this. Was quite a faff bc the beef was very fatty, but managed to get a clear stock after several passes through some cheesecloth.
Then followed the wok of life recipe and topped with the leftover steak from the other night. Was pretty legit.I often sack off making stocks but have made the effort during lockdown and they’re so much better than bought ones.

No cooked in a pan.
I had it in the sous vide for 2hrs at 50c. If I didn’t have a sous vide for a steak this size I’d probably look to reverse sear it
