That kinds of looks like pulled cauliflower. Did you roast it whole and then break it down?
I've been experimenting with cauliflower florets dunked in a light flour/water batter, chuck in oven until brown, bring out, allow to cool, cover in spices/chilli sauce/whatevs and back in oven til charred.

Nah. I just charred it and roasted it with brown butter, garlic and lemon.
Did the same thing with chilli and shrimp and hispi cabbage on Monday and was great

You can't 'pull' a cauliflower because it would just be mush. Roasted hot and fast gets it crisp and brings out the flavour without turning to babyfood

Made burritos tonight. Build order not cooked order
- steamed flour tortilla
- spread of sour cream con chives
- can of frigole beans include juice with chopped tomatoes, sliced onions heated in a pan then blended smooth, spread that
- Sprinkle of chopped fresh coriander
- pork belly chopped in cubes, panfried with onions and red pepper and a hefty table spoon of chili / cumin
- dollop of crushed avocado
- grated cheshire cheese
- jalapeƱos sliced
- fresh squeeze of lime juice
fold, eat, repeat, we call it Oscar's favourite, burp.
Then it's off to Salsa! for some Latin moves and Mojitos.

Got my porchetta game on the go last night. Used rosemary for the herb but think something lighter would be better: thyme or sage, or a mix of the two.
Added a little water to the tray to make a jus but it prevented the skin from crisping up. Absolute killer of a roast though, porchetta is amazing!

Anyone got a good tip for a nice veggie restaurant? I want to take my wife out for lunch on Friday (her 40th).. within a suitable radius of Camden would be good.
