There's a Mildred's in Camden Town as well now. It is always full of painfully thin people looking virtuous and hungry.
It's where the Camden Brasserie used to be, which was a really good local place where you always seemed to end up sitting on the next table to Jonathan Miller. It was a sad loss when it disappeared, but the landlords doubled the rent on a whim. -

Made risotto for the first time in a slow cooker tonight.
Seemed like a interesting idea, sweat allium's in a pan, add rice to coat with oil. Put in slow cooker, add stock and mushrooms. Leave for two hours on medium.
The rice broke down way too much, it's more mush than sticky grains. If I try it again I think I'll have to take 30 min off the cooking time.
As I made 4 portions and have only eaten one I'm hoping that it'll make nice little risotto patties that I can coat in panko and fry over the weekend.

Mildred's isn't even that healthy, I'm pretty sure every time I've been there I've had a burger and chips.
I may be many things, but I'm certainly not painfully thin.

So I'm coming down to london and wanna eat the best pizza I can, apart from Franca Manca Brixton and Homelike where else should I try. Wood fired oven is a bonus as I think it tastes loads better personally. Thanks

What's the advantage of making it in the slow cooker? It takes way less than two hours doing it the traditional way
I normally do make it by the standing-by-the-stove-for 30-minutes method but I wondered how well the hands-off method worked.
Not very well it seems.

I did it in plenty of ways, here's my favourite:
Aubergines and cherry tomatoes Stuffing:
- Sautee some chopped shallots and garlic
- Add the finely chopped tentacles of the squids
- Add finely chopped aubergines
- Add a glass of white wine and let evaporate
- Add diced tomatoes and chopped parsley, let cook few minutes
- Crumble fresh wheat bread in a food processor
- Mix all the ingredients in a bowl adding some oil, the stuffing is ready
Squids stuffing:
- Fill the squids to 3/4 of their volume (to account for the squid shrinking when cooking)
- Seal with a toothpick sideways (try to pinch it 2/3 times to keep it tight)
- Cut a small cut on the body of the squid to let air and exceeding stuffing out while cooking
- Roast the squids in a pan until cooked, turning them on all 4 sides. Alternatively add them to a pot of tomato and shallots sauce and let boil until cooked (I prefer roasting them).
Tips: keep the stuffing quite moist, I'd say the bread content shouldn't exceed half of the stuffing. Don't overcook the squid flesh or it'll get chewy.

This, if you go to the Dalston one, there's a Franco Manca up the road in Stokey, and then a SoDo a short hop in Clapton. That's a great afternoon, evening, and night of pizza in a small area.
