Just do an epic ragu, not too runny, with lots of garlic, tomato puree (h8rz) and red wine. Pinch of sugar too. When you do the bechamel take the time to infuse the milk by bringing to the boil with half an onion, carrot, celery, a bay leaf, peppercorn and a blade of mace. Important IMO for flavour. Parmesan in the bech and on top, a little cheddar if you must, no mozarella.

And loads of nutmeg grated on the top. Boil the milk and leave for 20 mins to infuse before mixing with the roux. Make enough lasagna to fill the freezer.

Picked up a copy of Persiana this afternoon and have been lusting all evening. Gave in and ordered vaguely similar takeaway due soon which I'm sure I'll be disappointed with.

Baby italian jebus is crying.
Onion, cloves and bay leaf in the roux.
Slow cook the sauce take the core out of the carrots and add to the sauce along with a couple of anchovies and muscavado sugar.
I'd be tempted to try the rabbit from iceland in the ragu. Because rabbit ragu is lush.

Have any of you had chicory in a meal?
Made some ham wrapped chicory the covered a gruyere roux and they were really tasty. But you do have to boil the chickory for 30 minutes.

Quite like chicory. Used to make a dish with raw chicory filled with lentils, pipperade, spiced walnuts and harissa to dip.
