Those shrimp and grits I made were pretty good. It was like an exercise in trying to fit as much butter in as possible. It was the first time I had made grits the long slow way and it is definitely better; maybe not 16 times the half hour method (they cooked for 8 hours) but definitely better. Also who cares how long something stays in your oven?
Poaching the shrimp was super easy. Just making beurre monté and keeping it almost, but not quite, boiling. It took like 10 minutes (4 minutes actively poaching the shrimp).
One could argue that it wasn't the healthiest dinner I have eaten.
