I started looking for information about these super nutrient rich watercress tops.
RE cheese curds: The ones I have had plain (from wisconsin, not canadia) were squeeky and tasted a bit like cheddar. I have made mozzerella before following instructions from this website and it worked http://www.cheesemaking.com/Recipe_CheeseCurds.html maybe you can diy some poutine?
Poutine is pretty good but possibly not worth all of the effort. Unless you are canadian and living in these harsh poutine-free environs.

Also, I feel like it is a spiritual relative of "loco moco" which I am fond of, possibly from a youth in Hawaii. Loco moco consists of plain white rice, one or two hamburger patties or spam slices, one or two fried eggs, and gravy over the whole thing. Best with a little soy sauce.

Makeing your own curd would be the the whey to go. Never done it myself but it's not difficult. Difficult is keeping/moving it so just make it daily. You can buy cheap veggie rennets online.

For Poutine it's curd cheese - it's not hugely different from paneer and not too difficult to make yourself.

Why don't you call it the english name... - Rabe? Or the correct Italian - Rapini.
You can't get it London anyway, because you don't grow it here AFAIK.It's call "Grelos" in Portuguese and you can get them in Britxon (just ask about, the Portuguese word, which BTW, is a synonymous for CNUT ;) ) in any veg stall.
