Hmmmm..... N'duja you can get from Broadway market. If you go in through Cat&Mutton side, there's an Italian guy selling cheese right in front of the posh fishmongers. He sells N'duja. (it's not cheap BTW).
Sobrassada from Majorca, maybe Brindisa (?).
Or maybe try bodieanddoyle, his Mrs is from Majorca.....if memory doesn't fail.

My Mrs bought some in Madrid a few weeks ago, she bought 2 kinds actually - the butchers and airport.
Never, ever, buy this at the airport... yuck. It wasn't even from majorca.

Question regarding meat-cook: Does anything change with keeping a temperature for 3 days or is it all about core temperature?
I admit to being vegetarian for my childhood and most of my adult life. I do not have much practice cooking the meats.
Connective tissue turns to collagen so it falls apart; short ribs are tough as boots without slow cooking.

A buddy of mine just did the support on his UK tour with Hawk House. He said that during the show, he would get pizzas delivered, send his TM to get him fish and chips and at the London show, he kept the radio mic live, left the venue, crossed the road, got some fried chicken and came back to the show to eat it.

Yeah, he talks about being a chef in that video. He can't survive keeping that lifestyle up (the breakfast interspersed with the ice-cream and cookie sandwich is something else) but he's going out in style... man got an appetite. The first episode is great as well...

Sure, but that isn't subjective so I guess I could just say "you are wrong".
In food news, my local grocer decided to have a Swedish section so I had a lunch of kottbullar and kanelbullar for fika time. Sure, they were totally shitty compared to what my grandma used to make, but did provide the rich tastes of nostalgia.

You could email La Credenza to see who stocks it in London. Wholefoods Market will. It's lovely but about a tenner a jar over here IIRC.
I'd love to try the Majorcan stuff.
N'duja is alright... but you can't compare it with Majorcan Sobrassada.
This is the tits. Much more flavoured than N'duja (IMO) and much spicier.
Anyway, both take praise from me.
