Tonights dinner.
Hot smoked salmon, skin separated and both pan fried (for extra crisy), on Sweet potato mash (with cayenne and allspice), with grilled asparagus, and a tomato salad. -

How you grill them asparagus? White or green?
The season has just started here in Holland so my annual bike ride to my favourite asparagus farm to pick up enough for a delicious meal (asperges op Brabantse wijze) and some soup and ofcourse the asparagus wine of the year, is drawing close.
The green ones however are available the whole year around. I like to grill them and glaze them off with some ketjap manis just before taking them out of the grill pan and topping them with a generous sprinkle of sea salt flakes.

On a generic version of the Foreman grill (open). With a little butter. Till just tickling with black.

The real winner is the hot smoked salmon. Oh my god. It is so good.

yeah that sounds rad. I have never tried that (hot smoke salmon). Grill pan works good if no foreman grill.

Yeah cant afford a proper grill myself, but a thick grill pan is a good alternative. I'm not a big fan of smoked salmon myself but I can imagine that if you like it, the combination with grilled asparagus is amazing.

Tayyab's was as amazing as it always is. It helps when you've been going there for so long, that the guy who seats everybody knows your name and shakes your hand.
As a comparison, the starters were much more exciting and delicious at Gymkhana, especially the Paneer tikka, it was definitely better than Tayyab's. The curries were a different story though, they were definitely better at Tayyab's. My girlfriend and I shared the bhindi (okra), tinda (baby pumpkin), and channa (chickpea) and they were all next level. More flavour, more scents and smells, and the breads we ordered - tandoori paratha, tandoori roti, and garlic naan - were all dripping with butter, and hot and fresh out of the tandoor, it was a much better main course experience.
For all you meat eaters, never shy away from the mutton tikka, that shit is too legit, been my favourite "tikka" from an early age and they do it well at Tayyab's. You just have to make sure you eat it first, as soon as it arrives, while it's still moist and succulent. Wait too long, too many manners, and it starts to go a bit chewy.
