Get a nice big bit of pork shoulder and cover it with a good dry BBQ rub, leave to rest for an hour or two... Preheat oven to full blast, put pork in oven, turn oven down to gas mark 1 and leave it in there overnight... Simples...
I'm about to eat some chicharrón I just pulled out of the freezer, gonna fry it up 'til crispy, chuck it in a bun and smear it with BBQ sauce... Omnomnomnomnom...

i think you can still get it
i am sure i read a recipe for a diy version where you put onions in a smoker, smoke the hell out of them and then blend the mixture, freeze in ice cube trays and have smokey flavour on hand.

Liquid smoke is easy to find in the US but never seen it here. I may have to do some hunting around. Any place central-ish that might have it but isn't Fortnum and Masons?

I go to Texas a couple of times a year for work and always bring back several bottles of liquid smoke. I will have a rummage for a spare bottle or two if anyone needs and can collect.

Went to a lovely new Mexican place last night.
It's near to Brighton station and called La Choza. Really good, simple and cheap! 2 main meals, glass of wine and a beer for just under £20.
My date had a pit smoked, pulled pork burrito and I had a slow cooked beef burrito bowl.
I noticed a while ago...

Great tip thanks a lot but we're heading to Duke Brew & Que now - tres excited - will keep pizza in mind for next time.

Bought it in Spain, bruv! It's pulled pork belly, most of the fat renders away when they're first cooked... They were delicious BTW...
