I didn't realise you were using a Classic, I thought you had a Cubika or something. In that case you haz adjustable OPV. Fiddling with this will improve your shots no end.
I can lend you a portafilter manometer to make it a proper job

I've just started at a new job with a La Marzocco and a propper grinder, and Hasbean beans.
However i'm getting quite differnet shots of Espresso. Fairly consistent extraction time, but some taste quite acidic, whilst others are pretty clean and citrus-y.
Would the fact that i'm still inconsitant/new to dosing and tamping be having that much of a noticable effect on the output?Ta

I'm completely addicted to the coffee at Kipferl, Long Lane. Something Austrain called a Melange (flat white). OMG it is just so creamy and mellow and there is not even a hint of burnt acidity.
It is so bloody good (shame they're moving to Camden end of Feb)

Does/has anyone have/had coffee at Fernandez & Wells on Beak Street near Oxford street~ish? I had a friend who used to work there and got free coffee occaisionally so always thought it was amazing. Just wondered what the "educated" thought of it!
I've found them to be a bit hit and miss actually. Definitely depends on who is serving, sometimes it's been great, other times it's been a bit grim on the coffee front. Food, on the other hand is amazing. Check out the other Fernandez and Wells on St Annes Court, had a fantastic red pepper soup there.

So.. 10 minutes to Espresso Rooms.
7 minutes to Bea's.
7 minute's to Brill (Very fond of this place)
4 minutes to Full City (Good and sometimes great coffee for £1)
15 minutes to LMNH
7 minutes to Modern Pantry
10 minutes to DoseOtherwise it's just local little cafes which serve scalding hot milk/espresso based drinks or chain stores which serve limp, luke warm pints of milk with some espresso flavouring.
Not CRAZY far. But the point is that you'd have to drink it en-route which I hate (Drinking from shitty cups while walking. I invariably spill it down my shirt.)
If you wait to get back it's gone cold which is no fun.When the rapha/nude pop-up was there it took 20 seconds which was just fine :)
The Rapha pop-up was the greatest thing ever. I was working literally next door the whole time it was there, so perfect.
You need to start heading for Caravan. Really great coffee, knowledgeable baristas up on the corner of Exmouth Market, probably the nearest and best to you until that new place on Leather Lane opens (was speaking to one of the guys at Notes yesterday who's going to be working there – full brew bar, traditional espresso menu and they're going to be training people to make coffee as well. The whole 9 yards).

Got a years supply of water filters today so the classic is back in business.... its just been sat in the corner of the kitchen for the last month, good to fire it up again.

It certainly will fuck your machine if you're using London tap juice. Ever looked in a kettle? Now imagine that stuff in a machine that has tiny valves and pumps... Oy.
I just use a brita jug filter, does a great job and are pretty cheap. Its certainly worth doing. In the meantime, order some descaler! And not citric acid because that will fuck your boiler.
How long have you been using it without filtered water?

24hrs, oops. I might get some de-ionized water from work for the weekend but this may be a little too filtered and get a brita filter early next week. Are you sure the brita filter takes the limescale out of the water?

I find my Brita takes about 95% out of the limescale.

Yeh, it pretty much nukes it from orbit®. In the mean-time, use volvic. Whatever you do, don't use evian.
When you use filtered water, you should only have to descale roughly every year. Its not something you want to do on a regular basis. This http://www.happydonkey.co.uk/hd0588-puly-baby.html is safe to use with your machine.
Get some puly caff machine cleaner and a backflushing disc while you're at it. I know it sounds like a ball ache but it'll keep your machine working like new for yonks.
