I have just worked out how to make micro-foamed milk with my Gaggia 106.
Pro-tip: turn the steam all the way on, then it works.

If the machine has too much steam pressure for you to make decent microfoam you're best option is to get a new nozzle for the steam wand with smaller holes in it. Either that or HTFU and get used to it.

If I need a coffee while pootling around town i usually use the Algerian coffee stores in Soho.For some reason the other day I went into Flat White on impulse....................Now this is a serious inquiry,can anyone tell me why (apart from being staffed by wankers and a total rip off) they only offer brown sugar.I refused to buy the coffee,what kind of crap is this..In my long life Ive drunk coffee in the best coffee drinking country's in the world (where coffee is treated with respect) and one thing Im sure about is you dont put brown sugar in Cafe,maybe in Nescafe,but thats not coffee.
So,whats the story ?...peace....M -

This is bullshit....have none of you drank coffee in France,Italy,Portugal,Spain,Morocco,ect,ect....
people use sugar (yes,far too much)....but White sugar,,as it happens I like a quarter of a teaspoon
in my espresso..and as this is the only sugar I ever use Im copacetic about it.....its not a question of need its complimentary .And i dont believe for a second all you coffee geeks are non sugar users..But to be offerd only Demarara in some where that charges £2 for a cafe is taking the piss,they are just trying to be fucking clever...... -

I spent an enjoyable two or three coffees chatting to a chap who had turned up to the Deptford Project with a coffee machine in a little van type thing.
He was the technical person for a small coffee importing and roasting company.
I hesitate to attribute this to him- but I seem to recall he said that with some roasts it is good to use just a very small amount of sugar to promote the flavours.
This may, of course, be wrong.

Perhaps that should be taken as some coffees are so ruff that they're roasted with an artificial layer of sweetness in an attempt to make it pallatable. Found in coffee served in France,Italy,Portugal,Spain,Morocco,ect,ect....

Ah sorry- the sugar was not added to the roast, but that when drinking said coffee to add a small amount of sugar to it was advocated.
Coffee that requires this may of course be complete shit, to be avoided like the plague.
Nah, far from a houseful, in fact it's not even a fully conceived idea. Sounds like there's some good interest, so depending on Northampton Saints fixtures I'll try to organise something towards the end of this month. Please shout up if you're interested.
