My chickpea concoction is looking sweet although I fear the red onion will turn blue and start to look a bit manky but it should taste fine.

i remember a tip about never covering greed veg when you cook it as its loses its colour, root veg covered keeps its colour (can't remember why!)

Aluminum pans also change the red tint to a more blue one, try adding something acidic like lemon juice. might bring it back and lift it ;)
