What negative effects should I look out for, considering my Canyon Carbon fork without spacer on top, not even a topcap?
The usual problem is that the stem walks up the steerer, so the headset bearing preload disappears and your steering gets sloppy. Crushed steerers are less common, and usually only happen if the highest steerer clamp bolt is very close to the top of the steerer. If one of the clamp bolts is actually level with or above the top of the steerer, stop riding the bike immediately and sort it out.

nor can upward angled stems.
Quill stems have to go up, then across. I'm sure this is where the dated idea of 'correct' comes from.
A 0° stem is the best (stiffest and lightest) for modern stems (and is upward angled on the bike).
I'm not criticising, just opening your eyes to new awesomeness! :-)

I think quill stem do that to correct the angle of the headtube, so, theorically, is should get closer to zero.

You've completely misunderstood :-/
This is a zero degree stem:
Obviously is far too green but.....

This is a zero degree stem:
Nah, that's a 90° stem :-)

Thanks. I've ridden it for about 25,000km without once removing it, all is tight & fine.

Sorry, I didn't mean that the newer 0 degree angle stems should be read relative to the ground.
I meant that a normal quill stem was (probably) born at -x degrees (relative to itself) so that it'd be closer to 0 degrees relative to the ground.

I looked it up on eBay and it states it's a Va Por la Hora, but it is not
Functionally I stand corrected. Tester's 2 mm on top cap is not aesthetically disturbing but I guess I just can't get used to overly far from horizontal stems, even though science says it would be a better solution for a problem I have not yet noticed on my bike. What negative effects should I look out for, considering my Canyon Carbon fork without spacer on top, not even a topcap?
