In the process of trying to build my girlfriend a bike and that's almost exactly what I had in my mind but hadn't realised it until I saw it all put together. I was considering one of those stermey kick back 2 spd hubs though. What frame is that with the integrated rack?
This has got my creative mind working overtime now!
That frame is made by Fast Boy Cycle, of whom build it for his girlfriend (now wife).
it was made specifically for everyday riding in New York, light, 1x8 (I think) gearing, comfortable laid back handlebar and integrated rack to carry stuff (lighter and possibly stronger depending on how it's build).
The 'stermey archies kick back 2 spd hubs' is a great little hubs, if it for your missus, I'd go for a kickback only hubs rather than the coaster and have two brake fitted.
it's not hard to put together a bike like that, any old frame with mudguard/rack mount, paint it, add wheel and big tyres, moustache bar and brooks saddle and you'll be fine.

No, they were for my dad's audax bike, of whom worn his original rims and hubs down after a year of doing 200 miles a week (Open Pro + Campag hubs).
Originally intended to have Chris King hubs, but they (and Phils) don't do campag anymore, so the hubs end up going to be a Hope Pro laced to OP Ceramic with double butted spokes and kool stop pads for durability.
Want to have ceramic on my gangsta though, I have to try and get my shop to obtain the OP Ceramic so I can get it in trade price.

sounds like a very solid set up! Hope you don't have trouble getting those ceramics in - it's not as if they're particularly over the top or un-saleable I'm sure they'd move if you got them in. I'm really loving your builds can't wait to see the gangsta when it's got the cantis and everything.

Seems like a poor choice for the bike, you need something wider than an Open Pro. If you want ceramic, consider Rigida Grizzly CSS, much cheaper than OP ceramic too, so missing your trade discount might not be such a problem.

mdcc, I run 28c regularly, and 30c cyclocross tyres, I don't think I'll need a wider profile (did take your point as the max size is 32c on the Open Pro).

Your tyres might work on an Open Pro, but they will work better on a wider rim.
