why? (only asking so won't make such an error at some point in future)

Because the flat bottom part of the drop ends up at a 45deg angle, the hooks are too tight under the top so you bang you wrists on the bend if you try to sprint etc. Handlebar bends and brake lever hoods have evolved together, and anachronistic combinations end up not working.
