I doubt they're being used for anything else than showing off.
Some don't have tires, some don't have pedals, they're different sizes,...
But who knows, maybe the room next door to this one holds a private indoor track and this is just the dressing/locker room (with ugly leather seats) ;)
By the way, I don't know much about the evolution of wheel spoke patterns, but that radial front wheel on the orange merckx seems a little anachronistic... maybe one of the track-bike-historians can shed a little light on when people started using radial spokes...
