It changes gear by using compressed fluid. Less effort expended shifting gears, more effort available for twiddling pedals.

Never used hydraulic brakes myself, but the 'raison d'etre' of hydraulics is to increase leverage.
Less effort required at lever or pedal (input) for work needed (output).
