I'd definitely recommend having a go on a Pinion bike before throwing any money at one. I'll have mine at July's Epping ride if you want to try it :-)
Is it an XC type bike you're looking for, as gearboxes tend to be better suited to more downhill and touring based riding? I'm not concerned about the weight, as I have enough of that myself for it to not matter

Having a belt drive rohloff on my cargo bike has made me more open to different technologies. I partly like it because it looks cool. Is the shifting slower on pinion? Or is it just a weight thing?

Ah right. If you're used to Rohloff shifting, the transition to Pinion would be pretty seamless
Still the microsecond pause, easing off on the pedalling when shifting, but I'd say the shifting feel is a little lighter and it runs a bit quieter than Rohloff ( a new Rohloff anyway )
Because of having a freewheel built into the Pinion box, it's advisable to use a really fast engaging rear hub, or you'll get an annoying pickup lag when you start to pedal
Having the gearbox weight central to the bike also feels better than being at the hub when riding offroad too. Not really noticable on the road

You could. Pinion don't advise it, but Effigear actually sell a fixed rear hub to work with their gearbox

The chain would be moving around when you're freewheeling, so perhaps Pinion aren't really into that idea?
Germans being more cautious than the French, perhaps?
